  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup butter, softened Can use margarine for a dairy-free version.
  • 1.5 cups sugar Plus extra 1/4 cup for rolling.
  • 1 large egg
  • 2 tablespoons lemon zest
  • 0.25 cup lemon juice
  • 1 teaspoon vanilla extract
For Rolling
  • 0.25 cup sugar For rolling the cookie dough balls.

Preparation
  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C).
  2. Combine Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, and salt. Set it aside.
  3. Cream Butter and Sugar: In another large bowl, beat the softened butter and 1 ½ cups of sugar together until light and fluffy, about 3-4 minutes.
  4. Incorporate Wet Ingredients: Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture. Beat until well combined.
  5. Mix in Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  6. Prepare for Baking: Scoop out tablespoon-sized balls of dough and roll them in the ¼ cup of sugar.
  7. Place on Baking Sheet: Line a baking sheet with parchment paper and space the cookie dough balls about 2 inches apart.
Baking
  1. Bake: Place the baking sheet in the oven and bake for about 10-12 minutes, or until the edges are lightly golden.
  2. Cool and Enjoy: Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack.

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze for about three months and thaw before serving.
