Prepare the Broth
- In a large pot, add the beef broth, sliced onions, star anise, cinnamon stick, fish sauce, salt, and pepper. Bring to a boil, then reduce to a simmer for about 15 minutes.
Prepare the Noodles
- While the broth simmers, cook the rice noodles according to the package instructions. Drain and set aside.
Thinly Slice the Beef
- If your beef is not already sliced, freeze for about 20 minutes for easier slicing. Make sure to cut against the grain.
Combine and Serve
- Once the broth has simmered, taste it and adjust seasonings as needed. Strain out the spices if preferred, then return the broth to the pot.
- Add the raw beef slices to the pot just before serving so they cook through in the hot broth.
Assemble your Bowls
- Place a handful of cooked rice noodles in each bowl. Pour over the hot broth and beef. Top with fresh basil, cilantro, bean sprouts, jalapeƱos, and lime wedges.
