Ingredients
  

For the soup
  • 4 cups dashi broth
  • 1/2 cup sliced shiitake mushrooms You can substitute with oyster or enoki mushrooms if unavailable.
  • 1 medium carrot, julienned
  • 1/2 medium onion, thinly sliced
  • 2 tablespoons chopped green onions Use as a garnish.
  • 1 tablespoon soy sauce
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. In a medium-sized pot, pour in 4 cups of dashi broth and bring it to a gentle simmer over medium heat.
  2. Once the broth is simmering, introduce the sliced shiitake mushrooms, julienned carrot, and thinly sliced onion into the pot. Allow them to cook for about 5-7 minutes until the vegetables are tender.
  3. Stir in 1 tablespoon of soy sauce along with salt and pepper to taste. Mix well, letting the flavors meld together for another 2-3 minutes.
  4. Just before serving, sprinkle in the chopped green onions.

Notes

To create the perfect soup, don't overcook the vegetables; they should remain tender but vibrant. You can add a pinch of ginger or garlic for an extra depth of flavor.
